Chef Ed Batuigas' cooking experience started from his family. His Lola (Grandmother) had a carinderia (Carinderia is a common type of eatery in the Philippines that serves affordable and locally-inspired dishes) which his mother learned from. Chef Ed's mother had a catering business when he was young. He learned from watching and asking her how things are done in the kitchen.
He came from the town of Iba which is the capital of Zambales province in the Philippines. Culinary influences in Zambales includes Ilocano and Pampanga home cooking.
He incorporated these local influences in Lutchi and Mary's menu.
